Spaghetti Pizza

I have been so obsessed with pizza this month and so I have been trying a lot of pizza recipes. Here’s one more that you can make from scratch- Pizza Spaghetti! No need to choose between spaghetti and pizza when you’ve got this recipe! It’ll combine both your favorites into one great dish! Also its a really smart way to use the leftover spaghetti from the night πŸ˜‰ Here’s what you need for this :

Ingredients :
Spaghetti ( leftover or you may make fresh ) (150-200 gms )
Pizza cheese – grated ( mozzarella + cheddar )
Pizza/Pasta sauce ( 6-8Β  tbsp )
2 eggs
Olive oil ( 2 tbsp )
Some pizza seasoning ( 1-2 tsp )
Garlic powder ( 2 tsp )
Italian seasoning ( 1-2 tsp )
And of course…toppings of your choice!
And yes that’s it. Now this is a really simple and delicious recipe!

Directions :
Get the Spaghetti ready if you don’t have any leftover.
Fill a medium sized pot with water, some salt and about a teaspoon of olive oil and boil it. Now place the spaghetti into the pot so that its completely immersed into the water. Now cook for about 7-15 minutes, depending on your preference and the type of pasta and package directions. Drain the pasta and pour some cold water from above. Drain again.
Heat about 1-2 tbsp of olive oil in a pan and add the pizza/pasta( 5-6 tbsp ) sauce to it. Add about 2 tsp of garlic powder and 1-1/2 tsp of pizza seasoning. Add the spaghetti to this. Cook for 2-3 minutes and remove from heat. Set it aside to cool.

Meanwhile prepare your toppings. I used cherry tomatoes, red and yellow bell peppers and some basil leaves.
Preheat the oven to 325 F.
When the spaghetti cools down, crack the eggs into it and mix well.

Β Into the same pan, add this mixture.

Cook for 2-5 minutes on low so that the egg gets cooked from the bottom. Now cover the handle of the pan with aluminium foil and put the pan into the oven on broil mode for about 6-8 minutes until you see that the egg is cooked from the top as well and forms a firm base.

Β Now that’s the pizza base. Once it cools, spread some more pizza/pasta ( 1-2 ) tbsp sauce onto this base ( you can also use pesto sauce ) and add your toppings to it.

Β Finally add the grated cheese on top and put it into the oven again until the cheese melts and it gets a little bubbly (for about 3-5 minutes ). And there you go! Your Spaghetti pizza is ready to cut and serve!

Pizza Omelette

Pizza omelette is a delicious choice for any breakfast, brunch or lunch! Being high in protein, it is a great way to use the leftover pizza toppings withoutΒ  the hassle of making a crust. A smooth and tasty omelette with toppings of a pizza, is definitely a great way to kickstart any day!
Β Ingredients :

For the base-
Italian seasoning ( 1 tbsp )
Eggs ( 6 nos )
Pepper ( 1 tsp )
Garlic powder ( 3/4 tsp )
Cream ( 1 1/2 tbsp )
All purpose flour ( 1 tbsp )
Salt to taste

For the toppings I used :
Chopped mushrooms
Onions cut into rings
Thinly sliced Bell peppers ( red and green )
Baby corns (Β  slit into 4Β  pieces vertically and then each piece further cut into 2 horizontally )
Cherry tomatoes (Cut into 2Β  parts)
You can make all kinds of variations by adding meat or your favorite greens etc.
Grated Pizza Cheese ( Mozzarella + Cheddar)
Pizza Sauce ( according to your preference, I used about 3-4 teaspoons )
Olive oil ( 1 tsp )
Pizza seasoning

Directions :
Get all your veggies ready.

Saute the mushrooms and babycorns with some salt and pepper and keep for about 2-3 minutes and keep it aside.Β I personally like to do this but you can omit it. Its all upto your liking.
Into a bowl, crack the eggs and add the salt, pepper, italian seasoning, garlic powder and whisk until well combines. Now add the cream and flour and whisk again for about 2 minutes until you see bubbles on top.
Take a shallow non stick pan and add about a teaspoon of olive oil to it. Move the pan to spread the oil evenly. Pour in the egg mixture into this and cook on low heat for about 2-3 minutes or until only the bottom part is cooked and firm. Run a knife lightly through the edges and you will see that the omelette wont stick which means its cooked. Turn off the heat.
Wrap a foil around the handle of the pan. Preheat your oven to 350 degree F on grill or broil mode. Place your pan into the oven for about 5-7 minutes or until the egg is perfectly cooked and firm. Remove from the oven and let it cool.
Β Spread some pizza sauce on the top evenly. I used the store bought one but you can make your own at home. And if you do have a great homemade pizza sauce recipe, I would be glad share it! πŸ™‚
Now arrange your veggies on top and at the end grate some cheese over it.
Bake for another 5-6 minutes in the oven until the cheese melts completely.
Sprinkle some pizza seasoning on top and serve hot with some ketchup!

Chocolate Glazed Doughnuts with Custard Filling

There’s nothing quite like freshly cooked doughnuts and when they are chocolate glazed and filled with gooey custard…ITS DELICIOUSNESS OVERLOAD!
*I apologise for not posting any pictures of the procedure. I accidentally happened to delete the folder they were in! 😦

Ingredients :
All purpose flour ( 250 gms )
Egg ( 1 )
A pinch of salt
Milk ( 70 ml approx )
Water ( 50 ml approx )
Active dry yeast
Butter ( 10-15 gms )
Sugar ( 50 gms )
Instant Custard Mix
Cooking Chocolate ( chopped ) (3/4 )
Heavy cream ( 1 tablespoon )
Oil for deep frying

Directions :
For the doughnuts :
Into a bowl, add the sugar, water, dry yeast, milk, salt, egg and mix it all well.
Gradually add all purpose flour and keep kneading until you get a firm dough ( like the one for dumplings ). Add some melted butter and knead once again. Now cover this bowl with a moist cloth for about 30 minutes in a warm place and let the dough rise.
Knead it again after 30 minutes and let it rest again for another 20 minutes.
Roll the dough into a disk with a rolling pin and cut the doughnuts with a doughnut cutter or you may use any round utensils with different sizes.
Once the doughnuts are cut from the dough, let them rest again for about 10 minutes.
Heat oil in a pan and deep fry the doughnuts on low until golden brown.
For the filling and chocolate cover:
Use any instant custard mix of your choice and follow the directions on the packaging.
Add the chopped chocolates into a double boiler with the heavy cream and let it melt. Keep stirring until you get a smooth and shiny chocolate ganache.
Alternatively, you may heat the chocolate in a microwave for 30 second intervals that is heat for 30 seconds, take it out and give it a stir and again heat for 30 seconds. Continue this until all the chocolate is melted and then add the heavy cream and mix well.
The last and final step : Use a sterilized syringe, take off the needle and use the rest. Suck up the custard. Poke a hole into the doughnut and fill the doughnuts with all the yummy custard. Poke as many holed and fill as much as you want but do not overfill it so much that it starts oozing out or becomes soggy.
Pour some chocolate ganache over the doughnuts and refrigerate.
