I am always in the search for easy mid week meals which are not only quick and easy but also comforting and satisfying. And yes, being an Indian, Daal Chawal is always a solution. But this day, I wanted to have something different ( because of the bad luck that had followed me around since the morning ), and being a fan of Italian food, what better than a cheesy and yummy lasagna!
But I was quickly reminded of how much effort it takes, cook the noodles separately, then baking which results in so many dishes 😦 I had heard a lot of buzz about the Skillet Lasagna, and so thought about trying this one out!
No baking, no cooking the noodles separately! A simple garlicy tomato sauce and the combination of 3 cheeses makes this one pot wonder just as good as its baked counterpart, and in about one third of the time! So lets get to cooking!
Ingredients :
Lasagna Noodles ( 4-5 sheets )
Marinara Sauce 12-14 tsp ( I used the Roasted Garlic and Herbs Sauce from Prego and 12-14 tsp were just a little less than half of the jar)
2 onions – finely chopped
Some red, green and yellow peppers – also finely chopped
Shredded Carrots – a handful
Dry Soya chunks – Half a cup
Finely Chopped Garlic – 1 tsp ( because I love garlic )
Pizza/Pasta seasoning – 1 tbsp
Olive oil – 2 tbsp
Black Pepper – 1/2 tsp
Pizza Cheese ( which is the combination of cheddar cheese and mozzarella cheese ) – I used the GoCheese Pizza Cheese
Ricotta Cheese
Salt to taste.
Directions :
Soak the soya chunks in a cup of water for about 15 minutes.
Meanwhile get the veggies ready.
Into a non stick skillet, add the olive oil add the onions to it. Saute until the onions turn translucent.
Now add in the garlic and saute this for about a minute on medium-low flame.
Next throw in the bell peppers and the carrots, add some salt and pepper and cook for about 3-4 minutes.
Add the soya chunks to this ( squeeze out the excess water first ) and cook all of this for about 2 minutes.
Now add in the Marinara Sauce. Cook for about a minute and then add about than half a cup of water. You may use the same water you soaked the soya chunks in.
Add the pasta seasoning, black pepper and some more salt if required and then cover and cook until it just reaches a boil.
Break the lasagna noodles and add to the sauce. Cover and cook on medium flame for about 20 minutes.
When the lasagna noodles have been cooked, grate some pizza cheese on top and also dollop some ricotta on top evenly.
Cover with a lid and keep for about 3-4 minutes or until the cheese is melted. The steam should melt the cheese.
Serve immediately.

Oh, wow! I’ve never heard of skillet lasagna! Lasagna is one of those meals I never make BECAUSE of the dishes. Thanks for the idea (mine probably won’t look as good as yours, lol.)

I love sauces. Not a huge of a fan of pasta or lasagna, even though I do like them, but the picture of the sauce and ingredients you have in there makes me curious how it can be applied to other dishes. Like on rice or potatoes.
