Sweet and salty are two flavors that are absolutely delicious together. Salted Caramel is the ultimate desert charger and can be used as a syrup to pour over many other desserts to maximize the heavenly experience. Well, that’s what I’ve done today! These divine chocolaty chewy brownies with the lovely salted caramel layer ( which tastes like butter toffee by the way ) on top is a match made in heaven! I don’t even have words to describe it! You will HAVE to try this to experience this heavenly combination of flavors!
For the Brownie :
Room Temperature butter ( 140 gms )
Cocoa Powder – 1 1/2 tbsp
2 large eggs
All purpose Flour – 120 gms
Melted Semi sweet chocolate – 200 gms
Some salt ( about 1/4 tsp )
Vanilla extract – 2 tsp
Sugar – 200 gms
2 tbsp warm water
1 tsp Instant Espresso Powder
For the Salted Caramel :
2 cups sugar
1/2 cup water
3/4 cup heavy cream
35 gms Salted Butter
Extra salt ( if you feel the need to ) I added 1/2 tsp more.
For the Brownies :
Preheat oven to 180 degrees. Lay your pan with parchment paper. Set aside.
In a large bowl, add the sugar and the softened butter and whisk together until fluffy. Into the warm water, add the instant expresso powder and mix. Now add this expresso mixture, eggs and vanilla extract to the sugar and butter mixture. Mix until everything is well combined.
Add in the melted chocolate and the cocoa powder. Now sift in the flour and mix until well combined and you get a smooth mixture.
Pour the batter into your prepared pan and bake for about 40 minutes or until a toothpick inserted in the middle comes out with moist crumbs of brownie but not wet batter.
Cool these babies completely and cut into squares.
For the salted caramel :
Add the sugar and water to the pan. Keep the heat on medium low.
Do not stir, just move the pan around a little in a circular motion to ensure even heating. Stirring causes sugar crystals to form around the sides. If these form, just use a pastry brush, dip it in water and clean the sides with it.
After about 8-10 minutes, it should look something like this :
After 2-3 more minutes, it should start to darken a little more, and at that moment just move the pan around, and if you see a brownish tinge under the bubbles, it means that your sugar has caramelized.
Switch off the flame and add the butter, salt and heavy cream. This time, stir a little bit and make sure the butter and cream are properly mixed with the caramel.
**Be careful when you add the butter because it may splutter a little bit or bubble vigorously. And the caramel is very hot at that moment so you need to be careful.
Your ready salted caramel should look like this :
** The salted caramel may become firm after cooling and difficult to pour or stir. Just heat it up again for a minute or two, and it will get thinner again 🙂
Drizzle this salted caramel on top of the brownies and sprinkle some sea salt ( if you have ) on top and you’re ready to go! This is so easy to make but oh so delicious! I think I’m totally in love with these!
