5 Ingredient Smokey Chipotle Chicken

This 5 ingredient  Chipotle Chicken has a smokey flavor from the chipotle aka smoke-dried jalapeños. It is a chili used primarily in Mexican and Mexican-inspired cuisines, such as Mexican-American, Tex-Mex, and southwestern dishes. This garlicy and smokey chicken is the perfect chicken to enjoy the weekend nights with, paired with some beer maybe 😉 Also, let me tell you, this is kid- approved! I served this last night to my 5 little cousin sisters, and it was gone in seconds! Mind you, seconds! And of course, loved by everyone else too! Plus, these are really easy to make and require only 3 other basic ingredients, apart from Chipotle paste and chicken of course.

I know chipotle chicken is not really common in India, but to give you an idea about the taste, it tastes exactly like the chicken inside the Smoked Chicken sandwich from Cafe Coffee Day! Infact, much more delicious and juicy! So here’s the recipe to this awesome, delicious and easy peasy chicken –

Ingredients :

Chicken whole leg/drumsticks – 500 gm

Mexican Chipotle in Adobo Sauce – 5 tsp ( you may increase or decrease according to your preference )

I used this chipotle paste

and here’s the list of ingredients it has

Finely chopped Garlic – 7-8 cloves

Freshly squeezed lemon juice – 1 or 1 1/2 tbsp

Olive oil ( 1 1/2 – 2 tbsp ) *Any oil can be used if you don’t have olive oil

Salt to taste

 Directions :

Thoroughly wash the chicken drumsticks and make gashes into the flesh. Something like this. Do this on both the sides.

Into a bowl, add the chipotle paste, chopped garlic, lemon juice and olive oil. Mix it all well together. You can also grind the mixture together if you want to. This is the marinade for the chicken.

Add the chicken pieces into the bowl and mix. Make sure all the pieces are coated well.

Cover with plastic cling wrap and refrigerate overnight or for atleast 6-8 hours. Marinating for longer enhances the flavor and texture of the cooked chicken. This will make the smoky flavor of the chipotle get into the chicken.

The next step is to cook the chicken.

You can cook this chicken by either :-

a- Broiling in the oven: Preheat oven to the max possible temperature. Add the chicken to a baking dish and place inside the oven. After about 5-7 minutes, turn the side and broil again for 5-7 minutes. Continue doing this until the chicken is properly cooked. Cook for a little longer if you want the chicken to be a little charred but make sure the chicken is still nice, soft and juicy.

b- Searing in a nonstick pan : Place the pan on high heat. Add about half a tsp of olive oil and spread it on the pan. Wipe of the excess with a tissue paper. Now add the chicken pieces over it and cook on one side. Turn over and cook on the other side. Cook for a little longer if you want the chicken to be a little charred but make sure the chicken is still nice, soft and juicy.

c- Grilling the chicken on a grill : Place the chicken over the grill. Cook on one side. Turn over and cook on the other side. You will get beautiful grill marks on the chicken.

d- Grilling in a grill pan : This is the method I find most comfortable and the one which I used so I can show you the proper pictures and directions for this one.

Place the pan on high heat. Now add the chicken pieces over it and cook on one side.

You will see little grill marks appearing on the bottom side and thats when you turn over the chicken and cook on the other side.

When grill marks start appearing on this side too, turn it over again and cook for another minute or two and repeat. When you are happy with the appearance of the chipotle chicken, remove the pan from heat.

And thats it! Mine was not too spicy, but it did have that smoky and garlicy flavor throughout. And guess what, it was gone in seconds! I can’t express how delicious this chicken turns out!

This is great for when you are going to have guests over as its really really awesome and does not require much effort.

 Tip : Marinate and keep the chicken in the refrigerator and grill when the guests arrive. But make sure you turn the chimney on or the exhaust on as it tends to get a little smoky, which might not be comfortable for some people.

But I’m sure, everyone will be really impressed with that sizzling sound that comes when you first place the chicken on the pan.

You may serve this immediately with some salad or even on its own!
