Cream Of Broccoli and Cheddar Soup

This lovely Broccoli cheese soup turns plain old broccoli into belly as well as heart warming goodness! It is thick and creamy, cheesy and also healthy, well because it has broccoli…right?

The hint of sweetness added by the caramelized onions and the carrots, along with the magical touch of the nutmeg and the sharp taste of cheddar makes this soup extremely delicious. Do give it a try and leave your feedback in the comments below!

Ingredients :
Olive Oil – 1 tbsp
Butter ( 4 tbsp )
Milk – 2 cups
4 tbsp flour
2 cloves garlic – minced ( adjust according to your taste )
3 cups Vegetable stock
1 large broccoli heads, florets and stems chopped ( about a cup )
Carrot large ( 1 ) shredded
Chopped onion – 1 small
Nutmeg – a pinch
Fresh Parsley leaves ( a little )
Black pepper to taste
1 tsp italian seasoning
1 cup sharp cheddar cheese – shredded
Salt to tasteIngredients :
Boil the shredded carrots, broccoli and parsley in water on medium heat for about 5 minutes.
Meanwhile,to make the roux, in a heavy bottomed skillet, add the olive oil and butter. When it starts foaming, add in the flour and stir for about 2 minutes.
 Add in the onion and garlic and saute again until the onions are slightly caramelized, and the garlic becomes fragrant. It will all turn into a light amber colour. Make sure the flour is no longer raw.
Add in the milk and stir so that there are no lumps. Simmer on medium heat until it has thickened a little bit.
Strain the broccoli, parsley and carrots and add to the soup. Also add in the vegetable stock and simmer again for about 20 minutes on low heat, until the mixture has thickened a little bit again. It should not be too thick because the cheese will thicken it further, but also not too thin, so adjust the amounts and time according to how you would like your soup.Now add in the garlic powder, salt, pepper, nutmeg and the Italian seasoning.
At last, add the shredded cheddar cheese and stir until the cheese melts.
